Chocolate Chip Cake with Chocolate Frosting

So you know how the saying goes “If life hands you lemons, make lemonade”? I didn’t really get handed lemons last week. If we’re going to continue the analogy, I basically got the best glass of lemonade ever, handed right to me. It was perfect, and by perfect, I mean that in the freshly-pressed, New Jersey boardwalk kind of way. It was tangy – not too sweet at all. But the thing about that is that, in real life, tangy means that something’s off. And that’s the reason this cake was baked.

Dark Chocolate Cake with White Chocolate Frosting

Do you remember, months ago (like, a year ago), when I made an obscure reference to cooking disasters and then never followed up? Yeah, this is that cooking disaster (which really, this should just go to show you how far frosting can go to cover up any and all ills).

As many of you are aware, I spent about nine months in Colorado around this time last year. I’d just decided to terminate my internship in Australia, and I came home knowing I’d made a good decision, but with absolutely no plans. When I don’t have plans, or don’t want to do anything else, baking is sort of a fallback for me, as it is for many of us. I’ve said this before, and I’ll say it again, but I find it extremely soothing. “Not Really What I Planned” Ice Cream Cake

The summer has slowly settled into a routine: runs (with or without my dad) in the morning, go to work, watch movies in the evening.  While I love my job, it is unfortunately not what I need right now – it has been slow, and I find myself constantly wishing for the emptiness of polite and silly conversations with people while I ring up their purchases.  It does succeed in getting me out of the house, however, and is therefore better than nothing.

When I am in the house, I look at the somewhat-bare cupboards, and mostly feel bored and uninspired to cook.  There is something about the unrelenting 95 degree heat that is oppressive, and it easily sends me cowering for my dark room, my bed, and a book.  With the promise of ice cream, however, I managed to muster myself and make a cake for our very belated Father’s Day celebration.

Chocolate Stout Cake

And look at this, I’m back as promised, bearing a recipe in hand!  (In some really good news, I found another batch of pictures that was lurking…but it was a bit of a disaster, so I’m not sure if I’ll share them with you now, or if I’ll wait, try the recipe again, and share later…we’ll see how desperate I get).

It was between this cake and the chocolate zucchini cake when my mom had to decide what she wanted me to bake her for her birthday this year – while the chocolate zucchini cake won out, this is a cake that’s very tough to beat.  It may be my current favorite cake (I mean, I get to sip beer while I make it, so who’s complaining?).  It’s rich, moist, and divine.  It’s also a little bit tricky, so I’ve experimented with several different things to make it as fool-proof and easy as possible.  This is also, in no way, a one or two bowl recipe.  This recipe is a “You’d better have all of your ingredients, pay a dishwasher for the day, and put on an apron” recipe, and as much as I love it, you definitely want to be prepared before walking into this one.

More uses for the Boats Growing in your Backyard: Chocolate Zucchini Cake

Because my garden is still growing prolific quantities of (delicious) zucchinis, I’m going to assume that yours are doing the same (or that you can buy some equally delicious zucchinis at your local farmer’s market), and therefore, that you are probably tiring of stuffed zucchini, sauteed zucchini, etc.  So, here I am, bringing you a new and hopefully unheard of recipe: chocolate zucchini cake.  This is an old family recipe (so old, in fact, that I’m not sure whose handwriting it is on the recipe card – my grandmother’s, maybe?) and while my mom hadn’t made it in quite awhile (probably I would have rejected this as an option when I was a child, so I rather doubt she made it then), last summer she used one of the baseball bats from our yard to make a delicious cake before I went to school.  This year, we kept up our new tradition, although I made it for my mom’s birthday instead.  Read the rest of this entry »
